Recipe Ingredients (for 4 servings):
4 medium sweet potatoes
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels (fresh, frozen, or canned)
1 cup diced tomatoes (fresh or canned)
1 red onion, finely diced
1 tbsp olive oil
2 tsp cumin
1 tsp smoked paprika
1 tsp garlic powder
½ tsp chilli powder (optional for extra spice)
Salt and pepper to taste
1 avocado, sliced
Fresh cilantro for garnish (optional)
Lime wedges for serving
Step-by-Step Instructions:
One: Roast the Sweet Potatoes: Preheat the oven to 400°F (200°C). Wash and dry the sweet potatoes, then prick each with a fork. Place them on a baking sheet and roast for 40-45 minutes, or until tender when pierced with a fork.
Two: Prepare the Filling: While the sweet potatoes roast, heat olive oil in a large pan over medium heat. Add the diced onion and cook until softened about 3-4 minutes. Stir in the black beans, corn, diced tomatoes, cumin, smoked paprika, garlic powder, chilli powder (optional), salt, and pepper. Cook for 5-7 minutes, stirring occasionally, until heated through.
Three: Assemble the Dish: Once the sweet potatoes are done, cut a slit down the middle of each one and gently fluff the inside with a fork. Stuff each sweet potato with the bean and corn mixture.
Four: Top & Serve: Top with sliced avocado, a sprinkle of fresh cilantro (optional), and a squeeze of lime. Serve immediately and enjoy!
