🥑 Ingredients You’ll Need
- 1 can black beans, drained and rinsed
- 1 cup roasted sweet potatoes, cubed
- 1 ripe avocado, sliced
- 1/2 cup shredded red cabbage
- 1/4 cup pickled red onions
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
- 1 tsp cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- Sea salt, to taste
- Small corn tortillas

Roast the Sweet Potatoes:
Preheat your oven to 400°F (200°C). Toss cubed sweet potatoes with a bit of olive oil and sea salt. Roast for 20–25 minutes or until tender and slightly crispy. -
Warm the Black Beans:
In a skillet over medium heat, add the black beans, cumin, smoked paprika, garlic powder, and a pinch of sea salt. Stir occasionally until heated through, about 5 minutes. -
Heat the Tortillas:
Warm your corn tortillas in a dry skillet for 30 seconds on each side or until soft and pliable. -
Assemble Your Tacos:
Layer the tortillas with the spiced black beans, roasted sweet potatoes, shredded cabbage, avocado slices, pickled onions, and a sprinkle of fresh cilantro. -
